Jazz theory Methods?

Anyone know where I can find some easy to understand Jazz theory methods? I want to learn to rip it up like this...

Miles Davis "kind of blue" is a good one to start for modal jazz, the tempo is on the slower side.

other ones I like are Spyro Gyra and John Scofield (Mike Stern is sick but too fast for me)
