Well, they don't make the Iceberg ones anymore. The only difference between that one and the new Frozen Sky TAT is that the new ones have a coil split rather than a mid boost. Old ones have creme binding as opposed to white binding on the new ones, and the new ones have cosmo black hardware instead of regular black. Nothing too major, they feel and sound almost identical. Bad news about ordering one though, Ikebe and Ishibashi can't ship Caparisons, along with various other guitar brands, to the US anymore. I got mine from them a few months back for $1650 shipped, but you're gonna have to pay $2400 and wait 3 months if you want one now. Guitar Asylum is the only option. I'd definitely say to get one of the ones on Ebay now while you can.
EDIT: Iceberg is more of a blue and white combination, as opposed to Frozen Sky which is more of a black and blue. Itaru has also changed the way he does the sponge finishes too, so they look pretty different now.
Each finish varies though, since they're done by hand, it's impossible to make them all look the same. The Iceberg one I had was darker looking compared to those two on Ebay. The price he has them listed for is awesome though. I sold my Iceberg one for $2020 and my Frozen Sky one for $2000...although I didn't want to sell the Frozen Sky.
You're never going to be able to play a TAT before you buy it. I'm telling you, they're awesome guitars and you won't lose any money on it. I've had 11 Caparisons, I know what they're worth.
