Legendary, I know, but I never really checked out King Diamond or Mercyful Fate. What albums (or concerts on YouYube) should I start with?

For King Diamond I would say Them and The Eye, particularly the song Father Picard, kick ass riffs all over that song. For Mercyful the only album I know is Into the Unknown and it's killer all the way thru.

MF Melissa and Don’t Break the Oath are masterpieces. 10/10 both.
So are KD Fatal Portrait and Abigail.
As with most bands the earlier material is the strongest, but anything from KD and MF is good to great.

This

Those 5-6 albums are masterworks of metal

Anything later is decent to high quality but not generationally good like the early stuff

I'm going to echo those who say Melissa, Don't Break The Oath, Fatal Portrait, and Abigail as those are all huge favorites of mine. Melissa and Abigail if I had to narrow it down to two albums or one from each group. Them has some decent moments and great musicality on it but I never loved it like those others.

Personally I favor Abigail, Them and Conspiracy for KD and everything from the 80’s for MF. Some decent stuff came out later but none of it captures a mood and feeling like the early stuff.

I'm biased, and will share my personal favorites...

MF - In The Shadows, Don't Break the Oath, Time, Into The Unknown, 9.

KD - Them, Conspiracy, Abigail.

A big fan. Have a listen to some of these Mercyful Fate songs:

You won’t be disappointed. I started with Mercyful Fate and then moved on to
King Diamond. The band was great and his solo stuff is too.

My faves as well @nightlight , together with Evil, Into the Coven and Come to the Sabbath. But Corpse Without a Soul is #1.
