The replacement OT's for old Fenders should be a good choice. The 4.4K primary for 50W or 2.2K for 100W for Bassman and Showman. Are you going to mix 6L6GC and EL34's with the Simulclass?

I have not tried these. I've only ever had GE's but they are 300 bucks each now and nearly extinct.
If the back is flopping around too much it can sound like shit. If you build your back in a way that resonance is controlled without the post. That would probably sound the best. Maybe a piece of aluminum angle across the inside of the back. You could use it for a flushmount jack plate too.

What DAW? In Reaper you have to enable inputs in options first. In the track select your module or midi input, arm the rack to record, and enable monitoring. Make sure the track output is assigned to the main out 1/2.

A few of my older friends insist that Schenker is the best. Because of the crazy lead tone and bend phrasing. An earlier version of what Friedman did on Rust in Peace.
The Alesis module probably has the midi out on the usb. Just run a long usb cord into the computer. If not, midi out of the module to midi in on the interface with the standard 5-pin DIN connectors.
