Have you looked at Warmoth or USACG,they both have descriptions on tone woods?
 
I'd say in general maple will be snappier and brighter, and rosewood will be warmer/rounder/smoother and maybe some more perceived bottom (could be just the rounder top though?). I don't mean maple being brighter as a bad thing either, it just has more top end presence. You can get maple neck with rosewood fretboard has a bit of that maple snap as opposed say rosewood on mahogany.

I think on Suhr's website (http://www.suhrguitars.com I think) they have a whole section where they describe fretboard and neck combination, as well as body woods, and sometimes go into how they pair together under each description. I'd recommend checking it out.

You have to also take into account if it's bolt on or set neck, as well as scale length.
 
maple and rosewood don't sound THAT different to my ears for fingerboards.

Ebony, OTOH, definitely does add some higher high end to the sound.

neckwood is tricky since we could be talking bolton, neckthru, or set.

in general:
maple = brighter
mahogany = darker


Wenge is the ultimate neckwood, IMO. warm. punchy. clear. satin-feeling, awesome grain and chocolatey looks. killer sustain. perfect.
