You should be able to see the ohm rating on each speaker. If you only run one, then set the amp to what is says on the speaker. I'm assuming it's two 16 ohm speakers in parallel for an 8 ohm total. If you run one, just switch it to 16 ohm.
Always remember the impedance on an amp is a minimum impedance. This means you need more load than your amp is set to. So:
Amp set to 4 ohms with 4-ohm load = OK
Amp set to 4 ohms with 8-ohm load = OK (Will shorten tube life)
Amp set to 4 ohms with 16-ohm load = OK (Will shorten tube life)
Amp set to 8 ohms with 8-ohm load = OK
Amp set to 8 ohms with 16-ohm load = OK (Will shorten tube life)
Amp set to 16 ohms with 16-ohm load = OK
You can either install a jumper across the two terminals of the speaker you don't want to use, or disconnect the leads from that speaker and connect the leads together, leaving that speaker out of the circuit.
