I decided to go down the rack route, and got myself a G Major 2, but it's being delivered to my house in the UK so won't have the chance to try it for over a month... the suspense killing me! :(
 
As far as the editing goes, I'm not very good on a computer so it will be a while before I try to tackle something like that.

Are you using balanced cables or just good quality cable for the loop conections? I had some Live Wire balanced cables but the they just seemed so cheep.

I am using colossal modern classic in my loop. my Einstein has standard unbalanced send/return so no use for balanced cables. if I was using a power amp that accepts balanced I would however use them.

As for the computer, if you have a Midi interface already and are capable of installing the program (pretty much click and follow the instructions) the program itself is pretty intuitive. don't be discouraged it really makes editing patches a breeze in comparison to scrolling through menus and pressing buttons. The added benefit of being able to back up all of your patches is a godsend. if it ever crashes or dies completely its a five min process to get all of your sounds back again.
