I've been watching MusicTechHelpGuy for a Logic Tutorial. It's great.
When it comes to gear demos, I like Andy a lot (for pedals). I don't really watch guitar or amp demos.
 
Tim Miller is really excellent for jazz/fusion/interesting harmony theory.
 
Josh Meader is another great one for fusion. He has lessons on JTC Guitar.

kohlekiller is pretty good for production. So is mixbustv. The house of kish was amazing, but he left.
