I also don't record, and wish to suggest a cab to try recording with. I'd recommend trying a "detuned" cab. I'm personally a fan of the way mine sound, however I'm running detuned 2x12's and haven't tried detuned 1x12's yet. This video from Happy Cabs does a pretty good job showing the differences I perceive when comparing my detuned 2x12 to a fully-loaded 4x12, except they're actually using a full-sized detuned 1x12. DIY notes for easily making your own from a regular 2x12 are below the video. You can go smaller than the Happy Cab and still sound pretty good, however if you go for the ideal dimensions it'll be about the same size.

If you go the DIY route you could take an appropriately sized 2x12 (at least 12" deep, 16" ideally, with a baffle that's at least 288 square inches, ideally 432 square inches) and just leave one speaker hole empty. Within the recommended baffle size range, smaller will sound boxier, though even the minimum should be way less boxy than a regular 1x12. Also, more depth corresponds to stronger bass response. Make sure the cabinet's length, width, and height are all different too, if any are the same it can promote resonances.
