He’s obviously a great chef, but the dramatic hatred BS is BS. Just helping people to learn chef skills would be far more productive IMO.
Yeah there is this and well teaching can only go so far or "teaching" in the traditional sense in a kitchen or well damn well nearly any working environment..... Sometimes people have more in them even they give themselves credit for.... and you need to give people a "push" so to speak.....
In a kitchen that is why many times I would hate a Chef or hell others would hate me.......
And its hard to explain but sometimes you just need that survival attitude to just get it done and get shit done. But otherwise as a Chef you really have to understand what is needed and what needs to be done without the BS and Ramsay shows that as well in many cases.
For example in a kitchen sometimes you have to wash dishes as a Chef even though that isn't the normal...... you have to wash dishes and cook..... you have to wash dishes......cook and serve and well that is a complete worst case scenario but yeah......
The main thing a Chef has to remember is to identify problems in a kitchen or a system and way is done and to make sure those problems are mitigated so things run as smoothly as possible...... things aren't always perfect sometimes and well but standards must be upkept and you have to roll with what is given on any day......
As Pizzaiolo too for example there are parts that some consider lower than others for example in some Pizzerias a guy who opens the dough is the lowest tier...... in others its the highest......... in other ones the guy who sauces the pizza is considered the master while the guy in the oven is a donkey and in other places the guy in the oven is the master because it takes a lot to cook under certain temps and skill.
What Chef Umberto Rubeli taught me at Naples (now Executive Chef for Portos Bakery) was that no role is more important than the other and as a Chef you have to go to the role and the place that needs help on any given day and circumstance. For example at Naples stretching was considered the main master role....... but even Chef would give up stretching and go on to top or sauce like some rookie or new guy or work the oven like some other donkey......
What matters is just getting shit done at the end of the day however it gets done though and getting shit done is the name of the game.
