Your opinions which one of these two pickups would be the brightest and have more bite.

Very different pups from my experience. 59’ is scooped and leans on bass and a healthy dose of treble/presence. The 36th is much thicker and has that signature Dimarzio pushed mid thing going on. I didn’t like either to be honest. Tons better options out there. YMMV.

My only experience with the 36th is in the bridge of an (alder?) Jaguar.
Can't remember the last time I played it. It's that inspiring. Others seem to like it, but probably being stuffed into a LP.

I love the 36th Ann. Pups but they are a little hotter and more mids than a traditional PAF. I like the Suhr SSV for a more historically accurate tone. The 59's are more traditional sounding, albeit a little more scooped as others have mentioned...

Just looking for a bright/cutting sounding PAF

I'd try a Duncan Jazz Bridge model. SH-2B. If you don't like it, Duncan has a 21 day exchange policy.

Jolly over at the Seymour Duncan Forum has posted 100 clips of different pickups on his Soundcloud page and they're VERY good. There are Jazz Bridge demos included and I'm impressed with that pickup.

First thought with bright & cutting PAF would be any of the Burstbuckers, but between those two I'd say the 36th.

Pearly Gates or Pearly Gates Plus, Duncan Custom 5 if you want bright and cutting. The Custom 5 is a '59 with more output.

I’ve had great results with the Duncan Whole Lotta Humbucker for that PAF+ vibe.

Sort of a PAF on Viagra thing as opposed to a PAF on Steroids thing - which isn’t really that much PAF any more.

I never cared for the Duncan 59 very much but I've had good success with the DiMarzio Anniversary. I like the neck in the bridge position though. It doesn't have the mid push of the bridge and is more balanced to my ear.

Which of both do you guys thinks is hotter?

I mean, I know the 36th is wound hotter, but it has the Airbucker thing water it down...

So which is it?

I'd say the 36th is slightly hotter, but they seem pretty close.

Looking for a low wind around 7.8k with a short alnico 5 magnet

There are a lot of independent winders that do that kind of pickup. I have a set of Brandonwound t-top replicas in one of my LP customs, measures about there and sounds great.

Seymour Duncan 78 vs Dimarzio 36th anniversary which would be brighter/cutting

Agreed on the Pearly Gates, but disagree on the Custom 5.
Custom 5 is a wide and balanced, medium/high output bucket, but not particularly a bright PAF or 59 type, in my experience. It doesn't have the bright 'kerrang' that several other humbuckers have. Heck, I think even a SH-12 Screamin' Demon might be a better fit for that, but my experience with that one is limited to the neck position.
