Again - not the prettiest but this is a common meal for me at the cabin. Mainly because it is so simple and there are no dishes to clean

Shrimp with Old Bay
Corn in the can with butter, salt and pepper - sometimes real bacon
Black beans in the can with salt, pepper, cummin

I usually drain out some of the liquid that is in the can and replace with water

Beef… It’s what’s for Christmas. Still trying to decide how to cook it. The weather looks like it might support an attempt to rotisserie on the grill, but it would be a first. Not sure I want to risk a new approach for the main course. Decisions…

Dinner… Sliced Portobello mushrooms and filets in a Demi glacé. I’ve been making my own glaze with Zip Sauce and I’m going back to that. The Demi was good but nowhere near the same level of flavor…

We hit 32 degrees yesterday for the first time in 2 weeks (I HATE winter - Mom Nature can lick my ass…). The temps have been spiraling down all day. Headed for -7. Not expected to be above single digits for highs until Thursday. Seemed like a good time to use the frozen pot pie filling. Off tomorrow for MLK day, so going to make homemade chicken noodle soup and crusty French bread…
